A fried-chicken glaze. Starting with the restaurant’s recipe.

When Tam Pak Pla Ra wanted to start selling its fried-chicken fish-sauce glaze, we began with the restaurant’s own flavour, developed samples to compare, and agreed on kitchen training suited to a small initial sales trial.

“The closest match.”

Photos & our work together

Three moments from our visit: the sauce samples, a conversation at the restaurant, and filming together. Open any photo for a closer look.

Starting with the restaurant’s recipe

We tasted the original sauce and developed three samples in two days.

A conversation at the restaurant

We visited GukGik near lunchtime to talk about working together.

Behind the collaboration

The restaurant was filming a promotional clip, and we joined the conversation on camera.

How we worked together

  1. Keep the restaurant’s signature flavour

GukGik contacted us through our page with her existing fish-sauce glaze recipe for the restaurant’s signature fried chicken. She wanted flavour and thickness to be consistent from batch to batch, without becoming too sweet or salty.

  2. Taste, develop, compare

We began by tasting the restaurant’s original sauce as a reference. Over two days, we developed three samples using different production methods so GukGik could compare their flavour and thickness with her original sauce.

  3. Choose sample C and plan for small batches

GukGik selected sample C after comparing it with her original sauce. When discussing production volume and packaging, the restaurant wanted to test sales in small quantities. We agreed on training in the restaurant’s own kitchen instead of placing a production order with us.

  4. Shelf-life testing is in progress

At the time of this update, shelf-life testing is still underway to help the restaurant plan for sale. A shelf-life conclusion will follow when the test results are ready.
